Tuna Goat Cheese Crostini

This quick and easy hors d'oeuvre recipe makes a delicious opening to a dinner gathering.

This simple crostini topping brings to mind Mediterranean flavors. The tangy goat cheese and tuna blend beautifully with a bit of lemon, onion, and slightly peppery and sweet fresh thyme.  

Serves 6

Ingredients

  • 1 baguette
  • 3 ounces good quality tuna, jarred in oil
  • 6 ounces goat cheese, plain
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 scallions, thinly sliced
  • 1 small red onion
  • 2 sprigs fresh thyme

Directions

1 | Slice the baguette at an angle and toast in the oven until light golden brown.

2 | Slice ¼ of the red onion very thinly and set aside.

3 | Combine the tuna, goat cheese, lemon juice, olive oil and sliced scallions in a small mixing bowl and combine until smooth and creamy.

4 | Spread a generous amount of tuna mixture onto a crostini slice and garnish with red onion, thyme, and fresh cracked pepper. Serve immediately.
